Breakfast Muesli with Cardamom

 
Breakfast Muesli Recipe

Hello all,

Today I have a recipe on how to make a quick and delicious breakfast Muesli.

You will need:

  • 1/2 cup chia seeds
  • 1/8 cup macadamia nut oil
  • 1/2 cup coconut oil
  • 1 tsp ground cardamom
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp himalayan rock salt
  • 1/2 cup honey
  • 1 cup dried goji berries
  • 1 1/2 cup roughly chopped almonds
  • 1 1/2 cup puffed buckwheat
  • 2 1/2 cup puffed rice
  • 1 cup rolled oats
  • 1/2 cup LSA (linseed, sunflower, almond meal)
  • 2 cups shredded coconut
  • 1/2 cup pepitas (pumpkin seeds)
  • 1/2 cup sunflower seeds

And this is how it is done:

Preheat fan forced oven to 150 degrees Celsius (302 Fahrenheit). Combine all ingredients (apart from the goji berries) in a large bowl and mix well. Spoon some of the mixture on a lined baking try to just cover the tray. Bake first batch for 10 minutes, stir, and leave it in for another 13 minutes until golden. Continue baking the rest of your Muesli.

Let the Muesli cool before adding goji berries and storing it in airtight containers.
